Gin, Other Liqueurs


  • 70ml Gin⁠
  • 50ml Limoncello ⁠
  • 50ml Lemon juice⁠
  • 1 Large egg white ⁠
  • 65g Caster sugar⁠
  • 1/2 tsp White wine vinegar⁠


  1. For the meringue: Whisk the egg whites with the white wine vinegar, then start slowly trickling in the sugar while continuing to whisk until soft peaks form. ⁠
  2. When all the sugar is mixed in & the meringue is glossy & smooth it’s ready.⁠
  3. Add the gin, limoncello & lemon juice in a shaker with ice & shake well.
  4. Strain into a coupes & top with fresh meringue. Char the top of the meringue with a blowtorch & serve.⁠
