- For the meringue: Whisk the egg whites with the white wine vinegar, then start slowly trickling in the sugar while continuing to whisk until soft peaks form.
- When all the sugar is mixed in & the meringue is glossy & smooth it’s ready.
- Add the gin, limoncello & lemon juice in a shaker with ice & shake well.
- Strain into a coupes & top with fresh meringue. Char the top of the meringue with a blowtorch & serve.
